The “Antonello Colonna” restaurant was founded in 1874 in Labico, a village
near Rome. A family-run concern since its creation, it became an inn for
travellers, where horses were changed before the final section of the journey to
the capital (a sign of its destiny?).
From its beginnings, it set itself apart for the quality and abundance of its
home cooking. In 1985, Chef Antonello Colonna took over the reins, and oversaw a
gastronomic revolution that would immediately conquer the most refined palates
of Rome's gourmands. Antonello’s mother embraced this revolution
enthusiastically, supporting and following what became the restaurant’s new
regime: maintaining the flavours of traditional dishes wile giving them a
contemporary twist to adapt them to today’s more refined tastes and habits.
This “recipe of recipes” made it one of the best Italian restaurants. Its
specialities represent a traditional home-style cuisine that owes much of its
success to the simplicity and speed with which dishes are prepared.
